Preparation

  1. Thoroughly season salmon fillets on all sides with salt and pepper.
  2. Heat butter and oil in a large cast iron skillet. Add the pieces of salmon to the skillet, skin side first, and cook for 2-4 minutes on each side Remove from the skillet and set aside.
  3. In the same skillet, 1/2 tablespoon of olive oil and 1/2 tablespoon of butter, red bell pepper, and garlic and cook for about 4 minutes.
  4.  Add baby spinach and season with a pinch of salt and pepper. Mix until the spinach wilts down.
  5. Add cream cheese, cream, and parmesan cheese. Mix well until the cream cheese is melted and you get a creamed spinach-like texture.
